The Tree of Life I believe to be symbolically a reference to Adam.
The tree of life is mentioned several times in Bible.
ie Prov. 13:12 "Hope deferred makes the heart sick, but a desire fulfilled is a tree of life."

Although not mentioned anywhere else in Bible I think "Tree of Knowledge of Good & Evil" symbol for Eve.
The fruit of the "Tree of Knowledge" ie Eve's love could be either God centred or self-centred as it became when Eve was tempted by satan.

The trees in Eden all figure the kings and nations of the Bronze Age. One of the two featured trees is the King of Assyria, and the other is probably Pharoah.

Why?

Because that is how Ezekiel interpreted it, and he would know. Ezekiel 31:3. Ezekiel 31:9
